Horseradish cream

Though classically paired with prime rib, this horseradish – cream sauce is as versatile as they come. Whipped cream , mayonnaise, and horseradish create a creamy condiment perfect for a wide variety of meats. This horseradish cream gives that extra zing to rare roast beef and potatoes.

Whisk crème fraîche (or sour cream ) in a medium bowl until thickened and soft peaks start to form, 1-minutes. DO AHEAD Sauce can be made days ahead. The horseradish is intense and this creamy sauce is a smooth topping with the hearty kick of horseradish to bring out the best flavor of the beef.
